1.Preheat oven to 350°F. Grease a 6-muffin tin with cooking spray.
2.In a medium bowl, mix together the egg and ground beef. Add oats, peas, sweet potatoes, and parsley to beef mixture and combine well.
3.Divide meat mixture evenly between the six wells. Bake for 20 minutes or until the internal temperature is 160°F. Place on a wire rack to cool to room temperature.
