1 | Cup | Cucumber (diced) |
1⁄2 | Cup | Cilantro (chopped) |

Whisk lime juice, oil, garlic powder, salt and pepper in a medium bowl. Add quinoa, avocados, tomatoes, cucumber, cilantro and scallion; stir gently until combined.
