3CupQuinoa (cooked and cooled)
2 Avocados
1CupCucumber (diced)
1⁄2CupCilantro (chopped)
1 Green Onion (sliced)
1CupTomatoes (chopped)

Instructions

Whisk lime juice, oil, garlic powder, salt and pepper in a medium bowl. Add quinoa, avocados, tomatoes, cucumber, cilantro and scallion; stir gently until combined.
