1 | Avocado (cubed) | |
2 | Tomatoes (cubed) | |
1⁄2 | Cup | Red Onion (finely diced) |
2 | Tablespoon | Olive Oil |
1 | Clove | Garlic (finely minced) |
1⁄2 | Teaspoon | Lime Zest (grated) |
1 | Tablespoon | Lime Juice |
1⁄4 | Cup | Cilantro |
1⁄2 | Teaspoon | Salt |
1⁄2 | Teaspoon | Black Pepper |
Combine the corn, avocado, tomatoes, garlic and onion in a large glass bowl. Mix together last six ingredients in another bowl, pour over the salad, and gently toss to mix.
