Italian Sausage Soup

Ingredients
1 tablespoon Olive Oil1 pound Italian Sausage (casings removed)
1 whole Onion (chopped)
1 whole Red Bell Pepper (chopped)
1 cup Celery (chopped)
1 cup Carrot (chopped)
4 cloves Garlic (minced)
1 teaspoon Salt
1⁄4 teaspoon Ground Black Pepper
2 teaspoons Italian Seasoning
15 ounces Diced Tomatoes
32 ounces Chicken Broth
1 cup Water
1 cup Ditalini
2 cups Spinach (chopped)
1⁄4 cup Parmesan
1⁄4 cup Parsley (chopped)
Directions
- In a large pot on medium heat, add olive oil then add sausage and cook breaking it up for about 3 minutes.
- Add onion, celery, red pepper and carrots. Cook for 3 minutes. Add garlic, Italian seasoning, salt, and pepper. Cook another minute.
- Stir in broth, tomatoes and water. Bring to a simmer. Turn heat to medium-high and then add in pasta. Cover and stir occasionally. Cook for about 10 minutes, or until tender.
- Add in spinach, stir then season to taste. Ladle into bowls and top with parmesan and parsley.
