Ingredients
2 cups Sugar1⁄4 cup Unsalted Butter (softened)
1⁄2 cup Vegetable Oil
15 ounces Pumpkin Puree
4 whole Eggs
3 1⁄3 cups Flour
3 teaspoons Ground Cinnamon
1 1⁄2 teaspoon Ground Ginger
3⁄4 teaspoons Ground Nutmeg
3⁄4 teaspoons Ground Cloves
2 teaspoons Baking Soda
1⁄2 teaspoon Baking Powder
1⁄2 teaspoon Salt
1 1⁄2 cup Semi-Sweet Chocolate Chips
Directions
- Preheat oven to 350°
- In a large bowl cream together sugar, softened butter and oil. Add pumpkin and eggs. Mix until completely combined
- In a medium bowl sift flour, cinnamon, ginger, nutmeg, cloves, baking soda, baking powder and salt together.
- Slowly add dry mixture to creamed mixture and mix until combined.
- Fold in chocolate chips to combine.
- Fill muffin tins 2/3 full and bake at 350° for 20 minutes. If doing mini muffins, reduce cooking time to 11-12 minutes.
- Remove from tins and let cool on a cooling rack.
