Pudding Chocolate Chip Cookies

Ingredients
2 1⁄4 cups Flour1 teaspoon Baking Soda
1 teaspoon Salt
1 cup Butter (softened)
3 ounces Vanilla Pudding Mix
1 cup Oats (finely ground)
3⁄4 cups Brown Sugar
1 teaspoon Vanilla Extract
2 whole Eggs
2 cups Chocolate Chips
1 cup Nuts (chopped, optional)
Directions
- In a medium bowl, add flour, oats, baking soda, and salt then mix throughly.
- In a large bowl add butter, pudding mix, brown sugar, and vanilla extract. Using an electric mixer beat mixture until creamy.
- Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture until ingredients are well incorporated.
- Gently fold in chocolate chips and nuts (if using). Cover bowl and refrigerate mixture overnight.
- Preheat oven to 375 degrees. Drop dough by rounded tablespoons onto ungreased baking sheets.
- Bake for 10 to 12 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
