2 whole Cucumbers (thinly sliced)1⁄4 cup Rice Vinegar
2 tablespoons Soy Sauce
1 tablespoon Sesame Oil
1 tablespoon Honey
1 teaspoon Ginger (grated)
2 cloves Garlic (minced)
1 teaspoon Red Pepper Flakes
2 whole Green Onions (sliced)
1 teaspoon Sesame Seeds
1⁄4 cup Cilantro (chopped)
Directions
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, garlic, and red pepper flakes.
- Place cucumbers and green onions into the dressing tossing gently to coat.
- Cover the bowl and refrigerate for at least 30 minutes. Before serving sprinkle sesame seeds and cilantro.
